A wash shed at the bend of the river, a stone drain we refused to cover over, and eight brick arches that took a whole winter to clean.

What survived and what did not
The trusses, the arches and the drain survived. The 1970s ceiling, the roller shutters and a great deal of spray paint did not.
The drain runs the whole length of the floor and used to carry the wash water out to the river. It is glassed over now and lit from beneath, which was either a good idea or a very expensive one.
The old boiler alcove is the hottest corner in the building, so it holds the bread oven. Nothing about that was planned.

What we stand on
Four things we decided early
A card table is not a cash desk: no stake, no pool, no payout, no exceptions ever.
The grill stays open as late as the tables do, because eating at midnight is not a crime.
Nobody who works here has to argue with a drunk on their own.
The drain stays visible, whatever it costs to keep the glass clean.
Over 18?
The house is licensed premises for adults: a grill at the front, card tables at the back, no minors anywhere.
